Moroccan Butternut Squash & Goat Cheese Soup with Coconut Ginger Cream

Ingredients:

1 head garlic for roasting (or you may sub 2 cloves; not roasted)

2 tablespoons coconut oil

1 red bell pepper; chopped

4 cups butternut squash; peeled + cubed

1 teaspoon spicy curry powder

1 teaspoon smoked paprika

1/2 teaspoon cumin

1/2 teaspoon cinnamon

1/2 teaspoon cayenne pepper

1/2 teaspoon fresh thyme; chopped (or 1/4 teaspoon dried)

1 (14 ounce) can coconut milk (I used full fat; but lite will work too)

2 cups veggie broth

salt and pepper; to taste

4 ounces goat cheese; softened + more for topping

roughly chopped cilantro + pistachios; for topping

arils from one pomegranate; for topping

naan; for serving

Coconut Ginger Cream:

1/2 cup cooled canned coconut milk

1-2 tablespoons fresh ginger

Beef Masala Curry

Ingredients:

4 tablespoons olive oil

1kg lean diced beef

2 medium brown onions, roughly chopped

4 garlic cloves, finely chopped

2 red chillies, finely chopped

1 tablespoon fresh ginger, finely chopped

1 tablespoon ground cumin

1 tablespoon ground coriander

1 tablespoon ground turmeric

2 x 400g cans crushed tomatoes

2 cups water

2 teaspoons garam masala

1 cup natural Greek style yoghurt

to serve:

a small handful fresh coriander leaves

1 tablespoon natural Greek style yoghurt

extra sliced chilli (optional)

cooked basmati rice

poppadum’s

Methods:

🌶🌶Heat half of the oil in a large heavy bottomed sauté or casserole pan on a high heat and fry the beef pieces for 4-5 minutes, or until browned all over. (You may need to brown the meat in batches).

🌶🌶Put the browned meat on one side and reserve. Using the same pan reduce the heat to medium and add the remaining oil, fry the onions for about 4-5 minutes until softened and changing colour, then add the garlic, chilli and ginger and fry for another 1-2 minutes.

🌶🌶Add the spices and cook for another minute, then stir in the browned beef, a pinch of salt, crushed tomatoes and water, reduce the heat to low and cook uncovered for 1½ to 2 hours (add a little more water if needed) and stirring occasionally until the beef is tender and the sauce thick.

🌶🌶About 30 minutes before your ready to serve, stir in the garam masala and yoghurt (to add extra flavour and smoothness) and add salt to taste. Cook for a further half an hour.

🌶🌶 Serve topped with a tablespoon of natural Greek style yogurt decorated with sliced chilli and coriander leaves with a side of basmati rice and poppadum’s. Serves 4

Argentine style barbecue rump steak

Ingredients:

1 large slice Ritchies rump steak (about 1 kg)

1 tablespoon extra virgin olive oil

sea salt and freshly ground black pepper

4 Jalapeño chillies

chimichurri sauce:

1 cup packed coriander leaves finely chopped

1 cup packed flat leaved parsley leaves finely chopped

1 small birds eye or habanero chilli deseeded and finely chopped

1 clove garlic crushed

1⁄2 cup extra virgin olive oil

1⁄4 cup red wine vinegar

sea salt and freshly ground black pepper

Argentine style barbecue rump steak method

Methods:

🍽 Preheat a griddle pan or barbeque to hot.

🍽 In a medium bowl mix together all the ingredients for the chimichurri sauce and season to taste. Cover with cling film and refrigerate until ready to serve.

🍽 Rub the steak all over with olive oil and season generously with salt and pepper. Place the steak on the hot griddle and turn every 2 minutes for about 8 minutes for medium rare (more if you like it better done). Remove from the heat and rest covered in foil for about the same time you’ve cooked it for.

🍽 Place the jalapenos on the griddle at the same time as the steak, turn regularly until blackened and slightly collapsed, remove from the heat.

🍽 Serve the steak cut in thick slices drizzled with the Chimichurri sauce and garnished with the barbeque chillies.

🍽 Serves 4. Preparation time 15 minutes. Cooking time 10 minutes.
