ARROZ CON POLLO – CHICKEN & RICE

Ingredients:

1-2 tbsp olive oil

850g chicken thighs

1 tbsp dried oregano

2 red peppers, sliced lengthways

2 onions, finely chopped

4 garlic cloves, finely chopped

½ tsp dried chilli flakes

75ml white wine

2 x 400g tins plum tomatoes

400ml chicken stock

A generous pinch of saffron

250g short grain rice (Arborio or Spanish bomba)

100g green olives, roughly crushed and stone removed

Sea salt and ground black pepper

Healthy Hot Chocolate Recipe

Ingredients:

1 1/2 cups of coconut milk
1/2 cup of alkaline water

1 tablespoon extra-virgin coconut oil

1 tablespoon raw cacao powder

1/2 teaspoon raw maca powder

1/2 teaspoon powdered turmeric

a pinch of black pepper

honey to taste

3 dashes of pure cinnamon

a pinch of cayenne pepper

a pinch of Himalayan salt

Instructions:

In a small saucepan, whisk coconut milk and water over medium heat.

Just before it boils, remove from heat.

Place into a tempered glass blender.

Sift cocoa and maca powder through a fine mesh strainer and into the blender.

Add all the remaining ingredients.

Blend at high speed until the milk gets nice and frothy.

Serve immediately and enjoy.

Ingredients:

1 bosc or bartlett pear, cored and sliced 1/4 inch thick

1/2 teaspoon olive oil

1 cup milk

1/4 cup Greek yogurt

1 teaspoon honey

2 tablespoons goat cheese

1 tablespoon cocoa

1 tablespoon cocoa nibs

1 pinch cardamom

Directions:

🍺 Drizzle the pear slices with oil, place on a baking pan in a single layer and broil until golden brown, about 2-4 minutes per side. Keep an eye on them!

🍺 Puree everything in a blender or food processor until smooth, serve garnished with crumbled cheese and cocoa nibs and enjoy!

1 cup sour cream

1 cup heavy cream, chilled
