Salmon Souvlaki Bowls

Ingredients:

Salmon Souvlaki

1 pound fresh salmon, cut into 4 pieces

6 tablespoons lemon juice

3 tablespoon olive oil

2 tablespoons balsamic vinegar

1 tablespoon smoked paprika or regular paprika

1 tablespoon fresh dill

1 tablespoon fresh oregano

2 cloves garlic, minced or grated

1/2 teaspoon salt

1 teaspoon pepper

Bowls

1 cup dry pearl couscous or farro

2 red peppers, quartered

1 zucchini, cut into 1/4 inch rounds

2 tablespoons olive oil

1 cup cherry tomatoes, halved

2 Persian cucumbers, sliced

1/2 cup kalamata olives

4-8 ounces feta cheese, crumbled

1 recipe Tzatziki

juice from 1 lemon

One-Pot 45 Minute Coq au Vin with Brown Butter Sage Mashed Potatoes

Ingredients:

Coq au Vin:

4 thick cut slices bacon, chopped

4 tablespoons olive oil, divided

salt and pepper, to taste

1 sweet onion, diced

4 cloves garlic, minced or grated

1 small sweet potato, chopped in 1/2 inch pieces (peeled if desired, I left mine on)

2 medium size carrots, chopped in 1/2 inch pieces

2 tablespoons tomato paste

1 1/2 pounds boneless chicken tenders or small chicken breasts (may sub thighs if desired)

2 cups button mushrooms, sliced

2 cups red wine, plus more if needed

2 cups chicken broth

2 bay leaves

4 whole sprigs fresh thyme

1/2 cup fresh parsley, chopped

Mashed Potatoes:

4 large Idaho potatoes, peeled and quartered (I used Idaho, but you may sub Russet)

2-4 garlic cloves, peeled (I used 4)

salt

8 tablespoons unsalted butter, browned

8 fresh sage leaves, chopped

3/4 cup heavy cream

2 1/2 pounds chuck beef, cut into 1-inch cubes

1/2 cup cognac or brandy (see note)

1 bottle (750ml) dry red wine (about 3 cups), such as Pinot Noir 

2 cups beef broth, plus more as needed

1 tablespoon tomato paste

1 tablespoon chopped fresh thyme

2 bay leaves

2 cups fresh cranberries

4 tablespoons butter

3 tablespoons flour

16 ounces cremini mushrooms, sliced

3/4 cup warm water
3/4 cup warm evaporated milk
1 tbsp dry active yeast
1 whole egg (optional, but optimal)
1/3 cup sugar
3 tbsp melted butter
1/2 of a vanilla bean (1 tbsp vanilla extract)
3 cups bread flour
2 tsp salt

Chocolate Glaze:
1 cup powdered sugar
4 tbsp chocolate powder
4-5 tbsp water

Lemon glaze:
1 cup powdered sugar
1 lemon juiced and zested
2-3 tbsp water

Vanilla Custard:
1 whole egg
1 cup milk
3 tbsp cornstarch
1/4 cup sugar
1 tsp vanilla extract

Lemon Curd:
1/2 cup vanilla custard
2 tbsp lemon juice
1 tsp lemon zest

Apple Filling:
2 apples (gala, fuji, honey crisp)
2 tbsp brown sugar
2 tsp cornstarch
3-4 tbsp water
pinch of salt

Spiced Crumble:

3/4 cup flour
1/4 cup cold diced butter
3 tbsp granulated sugar
3 tbsp brown sugar
1 tsp ground cinnamon
1 tsp ground nutmeg
