Ingredients

1 cup dry quinoa

1 (14.5 oz) can low-sodium chicken broth

Salt

3 Tbsp extra-virgin olive oil

3 Tbsp fresh lime juice

2 tsp honey

1/2 tsp ground cumin

1/4 tsp ground ginger

1/4 tsp cayenne pepper (optional)

1 can black beans, drained and rinsed

1 medium mango, peeled, cored and diced*

1 red bell pepper, cored and chopped

1/2 cup sliced green onions

1/3 cup chopped cilantro

1 medium avocado (semi-firm but ripe), cored and diced
