Beef Soup (Kharcho) By Natasha’s Kitchen

Ingredients

3 lb beef stew meat

3 tsp salt

4 Tbsp light olive oil or any cooking oil, divided

1 medium onion chopped

2 celery ribs finely chopped

4 cups beef broth + 4 cup filtered water

28 oz can diced tomatoes

2 dry bay leaves

1 tsp ground coriander seeds

1 tsp smoked paprika

2 garlic cloves pressed

1/2 cup uncooked white rice I used Jasmine

2 Tbsp fresh lemon juice from 1 medium lemon

1/4 cup fresh parsley chopped, plus more to serve

1/4 cup fresh dill chopped, plus more to serve

Lamb Stew Recipe By Natasha ‘s Kitchen

Ingredients

4 oz bacon (4 strips, chopped into 1/4″ strips)

2 lbs boneless leg of lam or lam shoulder trimmed of excess fat, cut into 1 1/2″ pieces

1/2 Tbsp sea salt for the lamb plus 1 tsp for stew

1 tsp black pepper for lamb plus 1/2 tsp for stew

1/4 cup all-purpose flour or gluten free flour*

1 large yellow onion diced

4 garlic cloves minced

1 1/2 cups good red wine *

1 lb button mushrooms thickly sliced

4 cups low sodium beef broth or stock

1 Tbsp tomato paste

2 bay leaves

1/2 tsp dried thyme

1 1/2 lbs small yellow potatoes halved or quartered into 1″ pieces

4 medium carrots 10 oz, peeled and cut into 1/2″ thick pieces

1/4 cup parsley finely chopped for garnish

1 Tbsp olive oil plus more to drizzle

1 Tbsp parsley finely chopped

2 garlic cloves minced

1/2 tsp lemon zest

1 Tbsp lemon juice

1 tsp salt plus more for vegetables

1/8 tsp black pepper

2 lbs medium red potatoes scrubbed and quartered

3 medium carrots peeled and quartered

8 oz Brussels sprouts trimmed and halved
