Ingredients

Serves 2

  • 2 bowls of white fluffy rice
  • 4 ounces ribeye, thinly sliced into bite size strips
  • 1 garlic clove, minced
  • 2 teaspoons sesame oil
  • ½ teaspoon salt
  • 1 tablespoon oyster sauce (or soy sauce)
  • ¼ teaspoon ground black pepper
  • 1 cup chicken broth (or beef broth or vegetable stock)
  • 2 teaspoons potato starch

Vegetables and mushrooms

  • 3 dried shiitake mushrooms, soaked in cold water for several hours until soft, sliced thinly
  • 2 to 3 ounces enoki mushrooms (about ½ package), trim off the woody base of the stalks
  • 1 small carrot (about 2 ounces), cut it 2 inch long crosswise and slice thinly
  • 1 spicy green chili pepper (optional), chopped if using
  • 2 green onions, divide white and green. Cut white part into 2 inch long and chopped green part for garnish

Poached Cod In Tomato Sauce By Kitchen Stories

Poached cod in tomato sauce

Ingredients

400 g cod fillets
10 cherry tomatoes
1 shallot
1 clove garlic
2 tsp olive oil
1 tsp tomato paste
100 ml white wine
50 g tomato purée
100 g unsalted butter
1 tbsp capers in brine
1 tsp lemon zest
3 sprigs tarragon
salt
pepper
sugar

STEP 1 OF 3

Halve cherry tomatoes and mince shallot and garlic. Cut cod fillet into equal portions and season with salt.

Ingredients
  • 1/2 lb ground beef ( you can also use 1/4 lb ground beef + 1/4 lb ground pork)
  • 4 oz extra firm tofu (this is about 1/4 of a standard 14 to 15 oz tofu package or 1/2 of the package shown below)
  • 1/4 cup onion , finely chopped
  • 1 Tbsp green onion , finely chopped
  • 1/2 tsp garlic , chopped
  • 1/8 tsp garlic powder
  • 1 1/2 tsp sugar
  • 1 tsp cooking rice wine or mirin
  • 1 1/2 tsp soy sauce
  • 2-3 tsp sesame oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/4 tsp sesame seeds , crushed
For coating
  • 1/4 cup flour
  • 2 eggs , beaten
  • 1 pinch salt

Fill half of the perilla leaf with beef mixture and fold it over to make a folded sandwich.

How to make… Chicken Paprikash!

Ingredients:

75 Milliliters Sunflower Oil
4 Large Onion
3 Teaspoons Paprika
8 Chicken Thighs
1 Green Pepper
1 Tomato
1 Tablespoon Cornflour
200 Milliliters Sour Cream
300 Grams Flour
2 Eggs
1 Pinch Sea Salt
1 Pinch Black Pepper

 

Methods: 

  1. Heat the oil in a large pan over a medium heat. Add the sliced onions and cook for 6 minutes, until translucent, stirring occasionally. Now comes a secret step: remove the pan from the heat and add the paprika. This is very important – if you add the paprika over the heat, it may burn and acquire a bitter taste. Return to the heat, add the chicken thighs and stir so that the spicy onion mix covers the meat evenly.
  2. Pour in about 500ml water, making sure the liquid doesn’t completely cover the meat. Add the sliced green pepper, the whole tomato (which will be removed at the end) and season with salt and pepper.
  3. Cover and simmer over a very low heat for about 1 ½ hours. Remove the chicken and whole tomato from the pan and set aside on a plate. Depending on the thickness of the sauce, cook for 10 minutes uncovered, to reduce the liquid slightly.
  4. Whisk together the corn flour and soured cream and mix this into the sauce. Slowly bring to a low simmer and cook for 5 minutes until you are left with a spicy, thick sauce. Return the chicken to the pan and toss to coat in the sauce. (You can prepare the dish in advance up to this point – it tastes even better when reheated the following day.)
  5. To make the dumplings, tip the flour into a mixing bowl with a pinch of salt and make a well in the center. Add the eggs and 100ml lukewarm water. Beat together, being careful not to over mix, until a rough dough forms. Using a teaspoon, form into 20 small rough dumplings. Cook these in a large pan of boiling salted water for 4–5 minutes, until tender. Serve with the chicken and toss gently to coat in the sauce.
