A winter warm stew 

INGREDIENTS

225g puy lentils

Sea salt and freshly ground black pepper

3 tbsp rapeseed oil

8 pork sausages

4 garlic cloves, finely chopped

1 onion, finely diced

2 carrots, finely diced

2 celery sticks, finely diced

300ml chicken stock

400g tin of chopped tomatoes

1 dried bay leaf

2 tbsp roughly chopped fresh flat-leaf parsley, extra leaves to garnish

4 tbsp crème fraîche, to serve
