Ingredients:

1 tablespoon unsalted butter

2 cups fresh corn kernels

1 tablespoon maple syrup

2 cups old-fashioned rolled oats

1 teaspoon kosher salt

3 cups water

1 cup whole milk

1/8 teaspoon ground nutmeg

1/4 cup plain 2% reduced-fat Greek yogurt

1/4 teaspoon vanilla extract

1 cup sliced peaches

Method:

🍲🍲 Melt butter in a medium saucepan over medium. Add corn and syrup; cook 3 minutes. Stir in oats and salt; cook 2 minutes. Add 3 cups water, milk, and nutmeg; cover, and simmer 5 minutes.

🍲🍲 Combine yogurt and vanilla in a small bowl. Divide oatmeal among 4 bowls. Top each serving evenly with yogurt mixture and peaches.

• 200g ( 2 ) ripe peaches, stoned and diced

• 50g ( ⅓ cup ) xylitol or coconut sugar

• Pinch of sea salt

Method:

1 Combine all ingredients in a bowl and mix together with your hands.

2 As you mix, gently squeeze the fruit to release their natural juices and create a little sauce / jam like mixture.

3 Store in an airtight container for up to 5 days in the fridge.

Serves 2

• ¼ cup dry chia seeds

• 1 cup of water

• 2 tablespoons coconut butter (not coconut oil)

• 1 scoop protein powder such as Sunwarrior

• 1 tablespoon maca (I use gelatinised maca)

• ½ dropper Sweetleaf toffee stevia

• ½ teaspoon lemon juice

• 1 tablespoon honey (optional)

• Pinch Celtic sea salt

• Defrosted blueberries

Method:

1 Put the chia seed in your serving bowl.

2 The rest of the ingredients (except the blueberries) get blended up in a blender until it forms a milk.

3 Pour the milk over the chia seed and leave for 15 minutes before serving.

4 When ready to serve, top with the blueberries and blueberry juice.
