Chocolate pots ~ CLEMENTINE SYRUP & CRÈME FRAÎCHE By Jamie Olivier

“Crispy on the top, but super-gooey in the middle, rich and an utterly mind-blowing chocolate experience, these pots are an honest and delicious expression of chocolate – they really celebrate the quality of the chocolate you choose. ”


300 g quality dark chocolate (70%)

200 g unsalted butter

300 g golden caster sugar

5 large free-range eggs


8 clementines

2 tablespoons golden caster sugar

12 teaspoons crème fraîche


🍮🍮 Preheat the oven to 160ºC/325ºF/gas 3. Snap the chocolate into a heatproof bowl, add the butter and a pinch of sea salt and place over a pan of gently simmering water until smooth and melted, stirring occasionally. Remove from the heat and leave to cool for 15 minutes. In a separate bowl, whisk the sugar and eggs together until thick and fluffy. Whisking constantly, pour the chocolate mixture into the eggs, until combined. Divide between 12 small ovenproof teacups or ramekins, then place them in a large, deep roasting tray. Place the tray in the oven, then carefully pour enough boiling kettle water into the tray to come halfway up the side of the cups. Bake for 25 minutes, then carefully remove the cups from the tray and leave them to sit for at least 15 minutes before serving.

🍮🍮 Meanwhile, to make the syrup, squeeze all the clementine juice through a sieve into a small pan. Add the sugar and bring to the boil, then reduce to a gentle simmer for 15 minutes, or until starting to thicken and coat the back of a spoon. Remove from the heat and leave to cool to room temperature.

🍮🍮 For maximum pleasure, enjoy the chocolate pots at room temperature – if they’re hot, they’ll be too runny, and if they even touch the fridge, they become too firm. Serve with a spoonful of crème fraîche and a drizzle of the syrup. Heaven.

Serves 8-10

  • 400g good-quality chocolate Swiss roll (jumbo size)

  • 390g jar cherries in kirsch-flavoured syrup

  • 180g caster sugar

  • 75ml water

  • 2 large egg whites

  • 300ml double cream

  • 50g preserved stem ginger in syrup, chopped, plus 1 tbsp syrup from the jar

  • 1 tbsp Grand Marnier or Cointreau

  • 50g chopped mixed glacé fruit

  • 30g marron glacé (optional), chopped

  • 30g shelled pistachio nuts, toasted and roughly chopped

  • few redcurrant sprigs, to finish (optional)

  • icing sugar to dust (optional)


  1. Line a 2-litre bowl with a double layer of cling film, leaving some excess overhanging the rim. Cut the Swiss roll into 1cm slices and use to line the base and sides of the bowl, cutting a few of the slices into pieces to fill the gaps as necessary. Drain the cherries, reserving the syrup. Drizzle the Swiss roll slices with the kirsch syrup, saving a few tablespoonfuls for the top. Set aside.

  2. Put the sugar and water into a small heavy-based saucepan and stir over a low heat to dissolve. Increase the heat to high and boil until the syrup registers 120°C on a sugar thermometer. Meanwhile, in a clean large bowl, whisk the egg whites to stiff peaks.

  3. When the sugar syrup is ready, gradually pour onto the egg whites in a steady stream, whisking as you do so. Continue to whisk until the meringue has doubled in volume and the sides of the bowl no longer feels hot.

  4. In another bowl, whisk the cream to soft peaks. Fold in the ginger syrup and orange liqueur, followed by the meringue. Taste and sweeten with a little more ginger syrup if required. Stir through the cherries, chopped ginger, glacé fruit, marron glacé, if using, and chopped pistachios. Spoon into the Swiss roll-lined bowl and level the top.

  5. Cover with the remaining Swiss roll slices, cutting them to fit as necessary. Drizzle with the rest of the kirsch syrup, then fold the excess cling film over the top to seal.

  6. Place a flat plate on top (one that just fits inside the rim) and weigh it down with a heavy tin. Chill for an hour, then remove the weight, wrap and freeze the bombe.

  7. To serve, unwrap the bombe and place on a flat plate or cake stand. Decorate with sprigs of redcurrants dusted with icing sugar if you like, or serve it just as it is. Let stand at room temperature for about 15 minutes before slicing.

  • Leftover turkey

  • 1 onion, diced

  • 1 tbsp vegetable oil

  • 1 jar maze Grill Thai green curry paste

  • 2 tins coconut milk

  • 100g mangetout

  • About 50g fresh coriander

  • Juice of 2 limes


  • Pick the turkey meat off the carcass and set aside.

  • Put the bones in a pot with 2 litres water and boil for 30 minutes. Strain the liquid then simmer in a clean pan until it reduces to 300ml. 

  • In a large saucepan, sweat the onion in the vegetable oil. 

  • Pick the leaves from the coriander stems and chop the stalks finely. 

  • Stir the curry paste and coriander stalks into the onion. Cook for a minute or so, until fragrant. 

  • Pour the reduced turkey liquid into the curry and bring to a simmer.

  • Add the coconut milk and heat through without boiling. 

  • Add the turkey meat, mangetout and coriander leaves and cook very gently for a final few minutes.

  • Finish with lime juice and serve with sticky white rice.

Shungiku Pesto
150 grams chrysanthemum greens (shungiku), chopped
2 cloves garlic, minced
30 grams walnuts
2 tablespoons parmesan cheese
½ teaspoon salt
50 milliliters olive oil
400 milliliters water

300 grams rice
½ onion, diced
6 shrimps, removed back vein
100 grams Asari clams, flushed the sand out
100 grams cauliflower
½ red pepper, diced
½ yellow pepper, cut into star shape
1 clove garlic, minced
2 tablespoons olive oil

Salmon roe

For chrysanthemum greens pesto, put crown flower, garlic, walnut, parmesan cheese, olive oil, and water into a blender and process until smooth.
Heat olive oil and garlic in a frying pan. Fry on low heat until fragrant. Add clams and shrimp, and fry until shrimps change color. Then remove them.
Pour remaining olive oil and add onion. Stir on medium heat until golden. Then put rice, and stir until translucent.
Add chrysanthemum greens pesto and mix well. Lay shrimp, clams, cauliflower, and peppers.
Put a lid over the pan and allow to steam for 15 minutes, or until rice and seafood are cooked through.
To serve, top with salmon roe.

The measurements and whipping time for the batter are critical to make a sponge cake. If the whipping time is not accurate, the sponge cake will become flat. Using a scale to measure the ingredients by weight is absolutely necessary.

Baking time depends on various factors like the size of round pan, type of oven you use and so on. I recommend keeping your eyes on the cake while baking.
