Easy Coconut Chickpea Curry By @HappySkinKitchen


  • 1 can of chickpeas
  • 1/2 can of coconut milk 
  • 1/2 can of chopped tomatoes 
  • 1 onion – finely chopped 
  • 2-3 garlic cloves – minced 
  • 1 tsp of turmeric powder 
  • 1/2 tsp of chilli powder
  • 1 tsp of curry powder 
  • Salt to taste

For serving

  • Rice
  • Veggies of your choice


  1. Add a dash of oil to a large pan and once hot add in the chopped onion.
  2. Fry the onion gently for 3-4 minutes until it starts to caramelised. Add in all the spices + the garlic cloves.
  3. Cook for another minute and continue stirring to avoid burning. Add a dash of water to prevent from sticking.
  4. Add in the drained chickpeas, coconut milk and tinned tomatoes. Mix everything together, add bit of boiling water just to enough to cover the chickpeas. Put the lid on an cook on a low heat for 20-25 minutes. Serve with some rice and veggies.

1 fresh red chilli or yellow chilli
100 g baby spinach
4 spring onions
1 bunch of fresh coriander
1 bunch of fresh mint

50 g feta cheese
1 punnet cress

2 x 200 g skinless free-range chicken breasts
1 heaped teaspoon ground allspice
1 heaped teaspoon smoked paprika

2 mixed-colour peppers

5 small potatoes

 (about 400g), scrubbed and cut into wedges

1 onion, halved and sliced

2 garlic cloves, roughly chopped

½ tsp dried oregano

 or ½ tbsp chopped fresh oregano

2 tbsp olive oil

½ lemon, cut into wedges

2 large tomatoes, cut into wedges

2 fresh skinless pollock fillets (about 200g)

small handful parsley, roughly chopped


🍲🍲 Heat oven to 200C/180C fan/gas 6. Tip the potatoes, onion, garlic, oregano and olive oil into a roasting tin, season, then mix together with your hands to coat everything in the oil. Roast for 15 mins, turn everything over and bake for 15 mins more.

🍲🍲 Add the lemon and tomatoes, and roast for 10 mins, then top with the fish fillets and cook for 10 mins more. Serve with parsley scattered over.

– olive oil
– 1 onion, chopped
– 1 big potato, peeled and chopped
– 2-3 lbs broccoli chopped into big pieces (or 3 12oz bags of broccoli florets!)
– 32 oz chicken broth, low sodium preferred
– water
– salt and pepper
– parmesan cheese (optional for topping)

1. Heat some olive oil in a pan. When it’s hot, add onion and salt and pepper. Cook until soft and translucent, about 8 minutes.

2. Add potato, broccoli and chicken broth. Then fill with enough water so it comes to 2 inches below level of broccoli (should be about 2 cups). Cover pan and simmer (cook on low) for about 15 minutes. You want the broccoli to still be green (otherwise it’s bitter) but you want it to be soft to the bite.

3. Use an immersion blender to puree the soup until it’s smooth. You can use a tradition blender (fill it halfway with soup, remove the center from the blender cap, cover with towel and blend in batches. Taste and add some salt and pepper (s&p) if needed. Top with parmesan cheese if you like.
