Spicy Eggplant and Tomato Dip By Okonomi Kitchen


  • 1 large onion (250g), thinly sliced
  • 2 garlic cloves, minced
  • 2 Japanese eggplants, sliced (approx. 1 cm thick) (400g)
  • 2 cups diced tomatos (500g)
  • 2 tbsp sugar-free ketchup (40g)
  • 1 tbsp coconut sugar (20g)
  • 1/4 tsp cayenne
  • Salt to taste


  1. Into a large deep pan (or pot), add in 1 tbsp of oil (or water for oil-free), and fry the onion and garlic for 2-3 minute over medium high heat- until lightly caramelized.
  2. Add in the sliced eggplants and cook for 3 minutes, until softened.
  3. Add in the diced canned tomatoes, ketchup, coconut sugar, cayenne and salt.
  4. Bring the heat down to a medium-low and mix. Allow it to simmer for 5 minutes, or until the liquid has reduced into a thick dip consistency.
  5. Add more coconut sugar, cayenne or salt- to taste.
  6. Transfer to a bowl and serve!

5 small potatoes

 (about 400g), scrubbed and cut into wedges

1 onion, halved and sliced

2 garlic cloves, roughly chopped

½ tsp dried oregano

 or ½ tbsp chopped fresh oregano

2 tbsp olive oil

½ lemon, cut into wedges

2 large tomatoes, cut into wedges

2 fresh skinless pollock fillets (about 200g)

small handful parsley, roughly chopped


🍲🍲 Heat oven to 200C/180C fan/gas 6. Tip the potatoes, onion, garlic, oregano and olive oil into a roasting tin, season, then mix together with your hands to coat everything in the oil. Roast for 15 mins, turn everything over and bake for 15 mins more.

🍲🍲 Add the lemon and tomatoes, and roast for 10 mins, then top with the fish fillets and cook for 10 mins more. Serve with parsley scattered over.

Shredded Tofu and Shiitake Stir-Fry

1 (15-ounce) package firm tofu, drained
2 tablespoons soy sauce
1 tablespoon Chinese Shaoxing or dry sherry
Juice of 1/2 lime, plus lime wedges for serving

Autumn Spinach Pecan Salad

3 tbsp. olive oil

2 tbsp. apple cider vinegar

1 tbsp. Dijon mustard

1 tbsp. raw honey

1⁄2 tsp. sea salt

1⁄4 tsp. ground black pepper

1 Granny Smith apple, thinly sliced

1/2 small red onion, thinly sliced

2-3 cups fresh baby spinach

1⁄2 cup raw pecans


Heat a pan over medium-high heat until hot. Add the pecans, and start tossing frequently to avoid burning. Once they begin to look darker and smell toasted, remove from heat and let cool.

In a small mixing bowl, whisk together the olive oil, vinegar, Dijon, sugar, honey, sea salt and pepper until emulsified.

Add all ingredients minus the dressing to a large bowl and toss with dressing until evenly coated.
