Mango Coconut Jelly

Ingredients

Mango Layer

  • 250 g mango flesh (for purée), roughly cubed (from about 1 ½ – 2 mangos, scant 2 cups)
  • Flesh of 1 mango, 1-cm cubes
  • ½ cup orange juice
  • 1 ¼ cups water
  • 2 tsp agar agar powder
  • ⅓ cup sugar
  • Lime juice, to taste
  • 15 small mint leaves, optional

Coconut Layer

  • ⅔ cup water
  • 1 tsp agar agar powder
  • 4 Tbsp sugar
  • 1/8 tsp salt
  • ⅔ cup coconut milk

Pomelo Salad (Yum Som-O) ยำส้มโอ By Hot Thai Kitchen

INGREDIENTS
Serves 2-3 as an appetizer
Dressing:

1 Tbsp palm sugar (see note)

1½ Tbsp lime juice (see note)

2 tsp fish sauce

Thai chilies, to taste

The Salad:

2 cups Pomelo, torn into chunks (see how to peel a pomelo in the video)

3 Tbsp shredded coconut, dark toasted

2 Tbsp roasted peanuts, coarsely ground

2 Tbsp dried shrimp, blitzed in a blender or coffee grinder until fluffy

3 Tbsp shallots, thinly sliced

2 kaffir lime leaves, very finely julienned

2 inches lemongrass, bottom half only, very thinly sliced

¼ cup mint leaves

1/4 cup cilantro leaves (optional)

Wild betel leaves for serving (optional)

Option: If you want to make the salad a bit more substantial, some people top the salad with some cooked shrimp as well.

Note: The measurements I provided is for a pomelo that is relatively sweet and not very tart. You will need to adjust the dressing measurements according to the sweetness/tartness of the pomelo. If the pomelo is quite tart, use more sugar and less lime juice.

INGREDIENTS

Serves 2

300g (1 package) soft tofu
About ⅓ of a carrot, julienned (I use a julienne peeler)
5 fresh shiitake mushrooms, sliced
¼ small bell pepper, julienned
4 slices ginger, julienned
1 green onion, thinly sliced on a sharp bias
Sauce

1 Tbsp soy sauce
1 Tbsp tao jiew (Thai fermented soybean paste), or 1 tsp miso paste
1 ½ Tbsp Chinese cooking wine
1 clove garlic
1 ½ tsp brown sugar
¼ tsp ground white pepper

Satay & Peanut Sauce By Hot Thai Kitchen

INGREDIENTS

Serves 4-6

  • 1 lb pork loin, cut into 2-cm thick chops, chicken, or beef (see note)

  • ¼ cup coconut milk for basting

  • Small 6-inch bamboo skewers, soaked in water for at least 2-3 hours

  • 4 slices white bread

Marinade

  • 1 ½ tsp coriander seeds, toasted

  • ½ tsp cumin seeds, toasted

  • ¼ tsp white peppercorns

  • 1 Tbsp lemongrass, chopped

  • 1 tsp galangal, minced

  • 1 tsp chopped fresh turmeric or ½ tsp turmeric powder

  • 1/8 tsp ground cinnamon

  • 1/8 tsp ground clove

  • 2 tsp brown sugar

  • ½ tsp salt

  • ½ Tbsp white vinegar or rice wine vinegar

  • ⅓ cup coconut milk

  • ¼ cup water

Peanut Sauce

  • 2 Tbsp red curry paste, panang curry paste, or massaman curry paste

  • 1¼ cup coconut milk

  • ½ cup roasted peanuts

  • 2 Tbsp toasted white sesame seeds (or substitute 2 Tbsp more peanuts)

  • 1-2 tsp fish sauce

  • 2 Tbsp finely chopped palm sugar

  • 2-3 Tbsp tamarind juice

Quick Cucumber Pickle (Ajaad)

  • 1/2 cup quartered and sliced cucumber

  • 1 Tbsp thinly sliced shallots

  • 8-10 slices of spur chilies, jalapenos, serranos, or fresno chilies,

  • 1/2 cup white vinegar

  • 1/4 cup granulated sugar

  • a pinch of salt

Recipe Notes:

If using chicken, both dark and white meat work very well. If using beef, choose a tender cut.

INGREDIENTS

Serves 2-3

The Meat Platter

You can have as many types of meat as you wish, but I recommend about 150g of protein per person. If using beef, pork, or chicken, use the marinade recipe below. If using seafood, liver or tofu, no need to marinade.

  • 150 g beef, pork, or chicken, thinly sliced (choose tender cuts)
  • 1 tsp oyster sauce
  • 1 tsp soy sauce
  • 1 tsp oil
  • 1 Tbsp egg white (keep the remaining egg for the meat platter)
  • ½ tsp tapioca starch or cornstarch

The Veg & Noodle Platter

Pick and choose your favourites from these options:

  • Napa cabbage, water spinach, bok choy, spinach or other soup-friendly greens with a mild flavour
  • Carrot ribbons
  • Asian mushrooms such as shimeji, enoki, shiitake, oyster, or king oyster mushrooms
  • Thai basil (must have!)
  • Sawtooth coriander or cilantro stems
  • Chinese celery 
  • Glass noodles or other quick-cooking noodles you like

Dipping Sauce

  • 2 Tbsp Fish sauce
  • 1 ½ Tbsp lime juice
  • 1 Tbsp Tamarind juice
  • 1 tsp roasted chili flakes, or to taste
  • ½  tsp sugar
  • 1 green onion, chopped
  • 2 leaves sawtooth coriander, thinly slices (or use cilantro)
  • 1 Tbsp toasted rice powder

Broth

  • 4 cups plain, unsalted pork stock (simply simmer pork bones in water for 2 hours)
  • 2 stalks lemongrass, smashed and cut into 2-inch chunks
  • 5 kaffir lime leaves, torn and bruised
  • 5 thin rounds galangal
  • 1 Tbsp fish sauce
  • 1 heaping Tbsp toasted rice powder
