Miso Cod (Black Cod with Miso) 銀ダラの西京焼き By Just One Cookbook


2 fillets sablefish (gindara) (you can also use salmon, sea bass, etc.)

2 tsp Kosher salt

2 Tbsp sake

Miso Marinade:

3 Tbsp miso (saikyo miso or white miso)

1½ Tbsp mirin (if you use white miso, use 2 Tbsp mirin instead 1½)

1½ Tbsp sake

Teriyaki Sauce, Hamburg Steak & Teriyaki Salmon By ABC Cooking Studio

Ingredients (1 serving)
4 teaspoons mirin

4 teaspoons sake

1 tablespoon soy sauce

2 teaspoons sugar

4 teaspoons water

1. Pour mirin and sake in a pan. Cook using low to medium heat for 1 to 2 minutes until mixture thickens and turns yellowish.

2. Remove pan from stove. Stir in soy sauce and sugar.

3. Place pan back on stove, and add water according to desired thickness.

For ginger or garlic flavoured teriyaki sauce: add sliced ginger or garlic to mask meat odours. Continue with Step 4.

For marinade: remove from pan and cool, then add to meat for marinating.

4. Heat for another 1 to 2 minutes.

5. Remove pan from heat and leave to cool. The sauce should further thicken. If it’s too runny, add a little potato starch and mix until desired consistency.

6. To check for thickness, drop the sauce on the back of a spoon.

If it flows off easily, the sauce is too runny.

Hamburg Steak

Ingredients (2 servings)

150g minced pork and beef

80g onion

½ egg

2 tablespoons breadcrumbs

Pinch of salt, nutmeg, and black pepper

Teriyaki sauce

1 tablespoon oil


Cherry tomato


Combine onions with minced pork and beef in mixing bowl until sticky.

Add egg and bread crumbs to mixture. Then, form a patty.

Scoop patty from mixing bowl, and toss back to reduce air pockets.

Add nutmeg, salt, and black pepper.

Shape patty.

Press a dent in centre of patty to prevent it from bloating while cooking.


1. Heat oil in pan.

2. Place patty in pan with dented side facing up.

3. Fry for one minute before flipping over.

4. To cook with sauce: pour teriyaki sauce in and cover pan with lid. Turn off heat for 2 to 3 minutes while moving pan in sifting motion. Plate patty and serve.

5. To glaze with sauce: plate patty and drizzle teriyaki sauce over.

6. Decorate with broccoli and cherry tomato before serving.

Teriyaki Salmon

Ingredients (2 servings)

2 x 70g salmon fillets

1 teaspoon salt

1 teaspoon oil

Teriyaki sauce

Grated radish


Remove excess moisture from salmon with paper towel.

Sprinkle salt on both sides of salmon and leave for 10 minutes.


1. Heat oil in pan.

2. Fry only one side of salmon for 2 to 3 minutes.

3. Remove salmon from pan. Dab excess oil with paper towel.

4. Pour in portion of teriyaki sauce and boil until it thickens.

5. Put salmon back in pan with the uncooked side facing down. Fry for 2 to 3 minutes.

6. Drizzle remaining teriyaki sauce evenly on top surface of salmon.

7. Plate salmon with grated radish and serve.

Sandwich With Namasu And Thickly Sliced Bacon With Chilli & Butter Soy Sauce By Food Creative Factory


30cm baguette

150g thickly sliced bacon

1 lettuce leaf

10g coriander

80g Namasu

20g butter

½ tsp soy sauce

1/8 tsp chilli powder


1. Incise the baguette crosswise after cutting it in half. Cut the thickly sliced bacon 7mm wide. Tear the lettuce into a size suitable for a sandwich. Cut the coriander 3cm wide.

2. Bring the butter to room temperature and mix till soft. Add soy sauce and chilli powder, and mix well. Spread it over the baguette.

3. Place the lettuce, bacon, Namasu, and coriander between the two pieces of baguette.

Salmon Namasu(Fried Salmon Seasoned in Vinegar) By Food Creative Factory


200g fresh salmon

2 tsp soy sauce

10g ginger

2 tbsp potato starch

Appropriate quantity of Salad oil

1/8 lemon, peeled

80g Namasu

120cc Namasu marinade

1 tsp soy sauce

1 tsp sesame oil


1. Peel the ginger and grate it. Shred the peeled lemon.

2. Cut the fresh salmon into bite-sized pieces. Soak them with 2 tsp soy sauce and ginger. Set aside for 20 minutes.

3. Heat the pan at 170°C with salad oil. Fry the salmon for about 5 minutes until brown.

4.Mix the peeled lemon, Namasu, Namasu marinade, 1 tsp soy sauce, and sesame oil. Add the fried salmon. After cooling, place it in an airtight container before placing it in the refrigerator for at least one hour so that the flavour of Namasu is well-absorbed into the salmon.

Chakin Tofu in Ginger Broth By Japan Centre

This is a dish for true tofu lovers. Made using the ‘chakin’ or parcel cooking method, this virtuous bowl combines a tofu, chicken breast and assorted vegetables which are immersed in a hearty ginger broth. Worth obtaining high-quality tofu for a heightened eating experience.

400g block good-quality firm tofu

2g dried wakame seaweed

200g minced chicken breast

1 tsp soy sauce

1 tbsp sake

1 egg white

50g carrot, finely chopped

3 spring onions, finely chopped

2 tsp finely grated ginger

1 tbsp corn starch

1 tsp baking powder

pinch of salt and ground white pepper

for the ginger broth:

750ml dashi stock or 2 tsp dashi powder mixed with 750ml water

3 tbsp soy sauce

2 tbsp sake

2 tbsp mirin

4 shallots, thinly sliced

1 tbsp corn starch mixed with 1 tbsp water

How To Prepare:

🍱🍱 Wrap the tofu in cheese cloth and squeeze out as much of the water as you can. Chop roughly and set aside.

🍱🍱 Soak the dried wakame in a bowl of cold water for 5–10 minutes. Drain and squeeze out the water, then chop finely.

🍱🍱 Combine the chicken with the soy sauce, sake and egg white in a large bowl, mixing well with your hands. Add the tofu, carrot, spring onions, 1 tsp grated ginger, wakame, corn starch, baking powder, and salt and white pepper. Carry on mixing well until everything is combined.

🍱🍱 Line a small rice bowl with a sheet of cling film and scoop a quarter of the tofu mixture into the bowl. Wrap the tofu firmly with cling film as if you are making a small parcel. Secure the top with a rubber band and repeat to make 3 more parcels. Place the parcels in a steamer and steam for about 20 minutes on medium-low heat.

🍱🍱 Whilst the parcels are steaming, make the broth. Heat the dashi stock in a saucepan, add the soy sauce, sake and mirin, and simmer for 3–4 minutes. Add the shallots and season with salt and white pepper, and let it boil for 2 minutes. Pour in the corn starch mixture and continue to cook, stirring all the time, forabout 20 seconds or until the broth is thickened and shiny.

🍱🍱 Remove the cling film from the tofu parcels and place each in individual bowls. Pour the broth over the top, and serve with the remaining grated ginger alongside.

Mabo Harusame Mung Bean Noodle Stir Fry By Japan Centre



60g dried harusame mung bean noodles
70g pork mince
1 dried kikurage wood ear mushroom
1 red pepper
1 tbsp sesame oil
1/2 tsp doubanjiang broad bean chilli paste

140 ml water
1 tsp chicken gara soup stock
2 tbsp soy sauce
1 tbsp brown sugar
1 tbsp oyster sauce

How To Prepare

🤗🤗 Rehydrate the dried wood ear mushroom in a small bowl of water for 5 mins. In a medium saucepan, bring 1.5L of water to the boil, and cook the harusame noodles until al dente, about 2-3 mins. Cut the noodles into into bite-sized lengths. Dice the red pepper into small cubes. Drain the excess water from the rehydrated wood ear mushrooms. Dice the mushrooms into small squares.

🤗🤗 Mix the ingredients for the sauce together until the sugar has dissolved. Set aside.

🤗🤗 Heat the sesame oil, and stir-fry the pork mince until browned, about 3-5 mins.

🤗🤗 When the mince is cooked, add the red pepper, and continue stir-frying. Add the sauce and the noodles, and simmer on low to reduce the sauce a little. Serve warm.
