CHERRY MASSACRE CHIA PUDDING WITH CACAO NIBS

INTO A BIG (CA 500ML) GLASS JAR:
Squash 4-5 black cherries, using your fingers to remove the stones

Squeeze half a lime

Sprinkle a good pinch of vanilla (ground up vanilla pod, or some natural liquid extract)

Drizzle honey or any other liquid, natural sweetener to taste

Add about 1 teaspoon of raw cacao nibs

Scoop in 3 tablespoons coconut yogurt – or any yogurt you like

Finally add 50 ml chia seeds and then quickly 150 ml water, close the lid tight and shake shake shake!

You must start shaking as soon as the chia seeds and water are in or you will have chia seeds sticking together in lumps.

If you are able to give the jar a shake now and again for the first 10 minutes – while the seeds are swelling – it’ll gives a good consistency but even if you don’t, your initial super shake will have put the seeds in a good place to expand. Ready to eat earliest after 10 minutes but best and most tender after about an hour.
