Ingredients:

8 oz (225g) boneless, skinless chicken thighs or breast, cut into bite sized pieces

1½” knob ginger, peeled

1 tbsp soy sauce

1 tbsp Shao Hsing rice wine

4 Chinese sausages

2 tbsp sesame oil

2 cloves garlic, minced

4 shiitake mushrooms, soaked and cut into strips

2 cups (400g) long grain rice, rinsed and drained

1 tbsp dark soy sauce

2½ cups (600ml) chicken stock

Salt to taste

2 green onions, finely sliced for garnishing
